* 1 c. butter, softened
* 1 c. sugar
* 5 egg yolks
* 1/2 c. almonds, finely ground
* 1 tsp. almond extract
* 3 c. flour
* 1/2 tsp. baking powder
* 1/4 tsp. salt
* 1/2 c. dark chocolate chips, optional
1. In a large bowl, with mixer on high speed, beat together butter and sugar until light and fluffy. Add egg yolks, almonds and almond extract; beat to mix.
2. In a small bowl, combine flour, baking powder and salt. Gradually add flour mixture into mixing bowl, beating on low speed until combined.
3. Place half of cookie dough on waxed or parchment paper; shape dough into 1" X 15" roll; repeat with remaining dough. Wrap in freezer wrap; freeze until ready to bake. (At least two hrs. to firm up dough.)
4. When ready to bake, preheat oven to 350°F. Slice cookies into 1/4" slices; place on cookie sheet. Bake until lightly browned, about 12 - 15 min. Remove from oven; place on cooling rack. Cool completely.
